Quick Fruit Crisp

This delicious, warming fruit crisp looks impressive but is easy to throw together if you have frozen or fresh fruit on hand. Make the topping by combining sugar, flour, cinnamon and salt, then cutting in pieces of butter and rubbing together. Stir in the oats. For the filling, you’ll combine berries, sugar and flour. Pour the filling in a pie plate or cast iron skillet, then sprinkle the topping over it. Bake and serve with a scoop of vanilla ice cream!

Buckeye Balls

These bite-sized chocolate peanut butter balls are easy to eat at home or bring to a party. Combine melted butter, confectioners’ sugar, vanilla extract and peanut butter and, after refrigerating until firm, form until balls. Dip the balls in melted chocolate and refrigerate until the chocolate is firm. Simple, but definitely a crowd-pleaser!

Easy Elephant Ears

Elephant ears, or “palmiers,” are crispy pastry treats flavored with cinnamon sugar. They can be made with just three ingredients: sugar, cinnamon and store-bought puff pastry dough. First, combine the sugar and cinnamon. Then, roll out the puff pastry dough and sprinkle with the cinnamon sugar. Roll it up like a jelly-roll toward the center, wrap in plastic, and freeze for ten minutes. Unwrap and cut dough in ½-inch slices. Bake and enjoy!
